The New Year has many of us thinking “how can I eat better without compromising the yummy goodness I love?” Well today I’m hoping to help inspire you to find a way. I LOVE avocados, like really love them. I could eat them every day. Although I know they are chuck full of healthy fats, I can’t do that. I was inspired to make a healthy alternative to bruschetta with this simple quick and easy recipe. I know you will love it as much as I do. It’s perfect on a cold winter day, serving it at a party or as a healthy snack for your kids to enjoy.
Southwest Avocado Bruschetta
- 1 ripe avocado
- 1 tsp finely diced shallots
- 1 tsp finely diced cilantro
- 1 french baguette
- ¼ can whole sweet corn
- salt and pepper to taste
- ½ tbsp butter
- baby tomato yellow or red tomatoes
- In a a toaster or in oven lightly brown sliced pieces of the baugette.
- In a small fry pan add the corn and butter and salt and pepper to taste. Cook on medium-high heat until the corn starts to brown and caramelize. Remove from heat and set aside.
- In a small bowl, combine the avocado, cilantro, shallots and salt and pepper to taste. Mix together. Do no over smash so that the avocado still has texture to it.
- Spoon about a 1 tbsp of the avocado mix onto each slice of toasted baguette and garnish with cilantro and sliced baby tomato.
