I’ve been so happy having this time to get back into the kitchen. I’m loving it and so looking forward to bringing you all more from scratch recipes. I had a few extra ripe bananas laying around and I didn’t want to make typical banana bread so I thought why not try my hands at banana muffins. They are quick and you will most likely have all the ingredients you need for this easy recipe in your pantry already. My family has really enjoyed these and I know your family will too!
Purée banane in a blender or use a better to blend very soft. In a medium bowl, combine 1 cup of puréed bananas, eggs, sugar, and butter and mix together until well blended. Stir in the blueberries and vanilla. In a large bowl, combine the flour, baking powder, cinnamon, and salt. Stir banana mixture into flour mixture until evenly mixed together. Spoon the batter into butter 12 cup muffin cups and bake at 350 degrees for 25 - 28 minutes or until a wooden pick inserted in the center come s out clean.
