Tomatillo Pineapple Steak Tips Recipe

Hi loves, happy Friday! If you follow me on Instagram, you saw me cooking this up the other day. I wasn’t sure what I was doing, but I knew it would taste good. So alas, below is what I came up with using tomatillos and pineapples as core ingredients.

Serves: 4
  • 1 and ½ pounds of steak tips (ask your local butcher what is the best cut of steak they have)
  • 1½ cups of ripe pineapple (cut in chunks)
  • 1½ cups of tomatillos (cut in chunks)
  • ½ cup red tomatoes (cut in chunks)
  • ½ cup yellow onion (cut in chunks)
  • ½ of a jalepeno pepper (cut up in slices)
  • 3 cloves of garlic (diced)
  • 2 tbsp apple cider vinegar
  • 3 tablespoons of sugar
  • ½ cup roughly chopped cilantro
  • Salt and pepper to taste
  • Adobo seasoning to taste
  1. Season up the steak tips with salt, pepper and adobo and set aside and put in a baking dish that fits all the meat. (smaller than a 9 x13 is fine) I cooked mine in a loaf pan and it worked out just fine.
  2. In a large bowl, combine the rest of the ingredients, season with salt and stir it all together. Lastly pour it all over the steak tips.
  3. Cover with foil, and bake at 350 for an hour to an hour and a half depending on your stove. Test until meat is tender.
