Southwest Avocado Bruschetta

A healthy alternative to traditoanl bruschetta
Ingredients
  • 1 ripe avocado
  • 1 tsp finely diced shallots
  • 1 tsp finely diced cilantro
  • 1 french baguette
  • ¼ can whole sweet corn
  • salt and pepper to taste
  • ½ tbsp butter
  • baby tomato yellow or red tomatoes
Instructions
  1. In a a toaster or in oven lightly brown sliced pieces of the baugette.
  2. In a small fry pan add the corn and butter and salt and pepper to taste. Cook on medium-high heat until the corn starts to brown and caramelize. Remove from heat and set aside.
  3. In a small bowl, combine the avocado, cilantro, shallots and salt and pepper to taste. Mix together. Do no over smash so that the avocado still has texture to it.
  4. Spoon about a 1 tbsp of the avocado mix onto each slice of toasted baguette and garnish with cilantro and sliced baby tomato.
